ANZAC Biscuits

ANZAC Biscuits


INGREDIENTS:

  • 125g butter, roughly chopped
  • 40g golden syrup
  • 3/4 teaspoon bi-carb soda
  • 20g water
  • 90g rolled oats
  • 90g desiccated coconut
  • 150 plain flour
  • 165g brown sugar

METHOD:

Preheat oven to 160°C

Combined butter and syrup in a medium saucepan, heat gently until melted.

In a small bowl combine bi-carb soda and water and stir until dissolved, add to melted butter and syrup and stir well.

Combine remaining ingredients in a large bowl, pour over warm butter mixture and stir well until a soft dough is formed.

Roll rounded teaspoons of mixture into balls. Place about 4cm apart on lined baking trays and flatten slightly.

Bake in preheated oven 12-15 minutes or until golden brown. Remove from oven and cool for 5 minutes then transfer to wire rack. Store in airtight container.
