Barbequed Prawn Skewers


INGREDIENTS:

  • 1/4 cup olive oil
  • 3 garlic cloves, crushed
  • 3 red chillies, finely chopped
  • 1kg large SA king prawns, peeled (tails intact), deveined
  • 2 tablespoons chopped fresh flat-leaf parsley leaves
  • 1 lemon zested, juiced
  • Lemon wedges, to serve

METHOD:

  • Place prawns, zest, juice, parsley, garlic, chilli and oil in large bowl. Toss to coat and season with salt and pepper. Thread 3 prawns onto each skewer, piercing through the body.
  • Preheat greased BBQ plate or grill on high. Cook Prawns for 2 minutes on each side or until cooked through.
  • Serve with lemon wedges
