National Vegemite Day

 

June 16 is National Vegemite Day! Dr Cyril P Callister developed the spread, initially labelled simply as ‘Pure Vegetable Extract’ from brewer’s yeast – one of the richest known natural sources of Vitamin B. In 2023, Vegemite will celebrate 100 years on 25 October, and has been manufactured in Port Melbourne, Australia, since its inception.

Vegemite is ‘mitey’ versatile, and can be used on more than just your toast in the mornings! Why not try this simple variation on mac n cheese:

Prep Time: 10 | Cooking Time: 12 | Serves: 4

Ingredients

  • 500g pasta, macaroni
  • 2 tbsp VEGEMITE & Cheese
  • 1 cup grated cheese
  • Chives to garnish

Method

1. Bring a large pot of water to the boil. Cook the pasta according to the packet instructions.

2. When pasta is cooked, drain the pasta reserving 1/4 cup of pasta water. Return pasta to the pot, stir through the VEGEMITE & Cheese, and reserved water. Stir over low heat until the pasta is coated.

3. Add the grated cheese and stir to combine.

4. Remove from heat and divide between 4 bowls. Garnish with chives.
