Platter Like a Pro

 

The humble grazing platter has evolved from the days where you simply add some jatz, cheese cubes and kabana to a plate and call it a day. Platters have now become both a feast for your eyes and stomach, by combining our five essential elements you will be able to platter like a pro and achieve the perfect aesthetic and flavour combination.

Something Sweet…

Incorporating a combination of both fresh and dried fruit is a great way to add sweetness to any platter. Sweet elements will counteract bitter and sour flavours while helping reduce the heat if there are any spicy components. When using fresh fruits try to use seasonal produce as it will be the sweetest and most flavour packed. If you’re feeling a bit playful try adding some chocolate as a sweet element to compliment your favourite wine.

Something Salty…

Salt takes on two important roles when combined with other flavour profiles. It enhances other flavours present (particularly sweetness) and balances against bitterness. Saltiness is usually incorporated by adding fresh cured meats such as thinly sliced salami or prosciutto. To obtain the freshest product, visit the deli section where all the meats are sliced fresh and to the desired thickness upon request. If excluding meat from your platter try adding some salted nuts or pretzels to give that salty punch.

Something Sour….

Sour or acidic flavours often associated with citrus and vinegar also give balance to a platter. Counteracting sweetness and heat, and adding liveliness and interest. Including pickles, sundried tomato or olives is a great way to incorporate acidity and accompany your other platter elements. Plus, they are absolutely delicious in their own right.

Something Crunchy…

Texture is another essential element to any good platter adding sensory interest. Crunchy elements like crispbread, nuts or vegetable sticks are used as the base to combine texture and flavour. Try adding a range of different crunchy components to accompany your range of cheeses and add variety.

Something Soft…

Soft elements such as cheese and dips are the foundation of any platter. Cheese is by far the hero and with so many to choose from you’ll be spoilt for choice. Try adding a range of soft, semi-soft and firm cheeses as they all carry very different flavours. Additionally, including dips can add an extra colour element to your platter. Play with the flavours, try using basil, beetroot or sweet potato to diversify from the traditional beige French onion (not that it isn’t great on the basis of flavour).

Keep in mind, it’s also always worth making seasonal considerations when it comes to creating your perfect platter. What the weather is like can determine what will work best. If it’s a balmy summers night incorporate more fresh fruits and vegetables, withholding cheese and meat at a minimum as will not keep well. In contrast, in the cooler months load up on meat and cheese to make it more hearty and filling.
